My 02 did all that because of "LOW FLOW" through the heater core. It still put out good heat. A simple by pass of the heater core proved the problem. BACK flushing solved the problem. Racing the engine also cooled it down as it increased flow to the t stat.

Normally if it still overheat after head gasket replaced you have a cracked engine block
they should've checked that
before they replaced the head in the block because is very frustrating to replace a head gasket and find later find out that the problem is in the block. it all depends on how bad it overheated and how many times it happened. also you HAVE to make sure your cooling fan is working properly and there is no restrictions on the ac condenser which is in front of the radiator and it would reduce the air flow.
