Default how to hot wire cooling fan?

yes, I know I'll bypass some excellent engineering, but the cooling system has always seemed marginal at best in Houston. Have replaced head gasket twice, H2O pump, t-stat, heater core, flushed system, etc. Now fans don't come on at all. Temp gauge works so I think the sender is OK.

Doesn't seem like it'd be that hard to wire the fan so it's always on when the ignition is on. Just want to make sure i do it right. What are the "gotchas" here? Is there some muffler bearing sensor 4 layers down what will freak if I bypass the sender/relay circuit? Where you you recommend I connect in, so as to not overload another circuit?
