Default Head Gasket Thickness for rebuild?

Hello
I'm new to this site and I'm hoping someone can help me answer this. I recently inherited my dad's 32 Ford street rod. BUT, it has a 350 chevy . I know just enough to be dangerous, and the first thing I want to do is replace the stock cylinder heads (3932441, 76cc) with some aluminum heads. Looking at the Dart SHP 72cc heads. What I can't figure out is what thickness head gasket I should be using? The engine is bored 30 over, 10.25:1 compression, and 280 duration cam.
Can anyone give me a bit of insight? Any help is much appreciated! Thank you!!
