Default hesitation

Every time i stomp the pedal through the floor, the car hesitates a second, then goes. it is a freshly rebuilt 350 with quote "the best quadrajet the engine builder has ever seen" is there something that would cause this? or do i just have to live with it? if i roll into the throttle slowly it has no hesitation, only if i mash it down, but it is a racecar, so i have to mash it.

TOO MUCH FUEL
The engine is getting to much fuel or not enough air as EuroGoldLs said and I an not sure about the adjustments on your carb so you might be able to fix it or it might be something you will have to live with

Yea, you need to tune your carb to right air/fuel mixture. Getting too much fuel and flooding carb.
