Default 07 Equinox "Engine Hot" light even on COLD START

Around November my equinox started having the "Engine Hot A/C Off" warning and all my fans come on and stay on even from a cold start. The warning light even shows in accessory mode. The temperature gauge does not move at all when this happens. It did this even with snow on the ground and it was below freezing.

​​​My AC also doesnt stay off when I turn the car on. The light on the *** will be on, I have to turn it up then back off for it to quit. But the AC will not blow cool and heat does not work either.

Now that it's hot out, after I've been stuck in traffic for a bit the warning light and my fans will turn off, the temp gauge will start working normally, and my AC will blow cool air.

​​​​​​I changed the coolant temp sensor in March, with no luck.
​​​​​​The thermostat was changed maybe 2-3 years ago.
My coolant does not leak and I've ensured there's no air trapped.
I had the error read and the code is P0128, which is for the engine reading too cold.

I bought the wiring harness for the coolant temp sensor but I'm DIY-ing all of this. I've been little nervous about doing that myself since it's more involved than just plugging something in. I do plan to do it, especially if people think it's a good idea.

Other issues with the car that may or may not be related:
  • Stabilitrak/AWD off warning lights. Sometimes if this light doesn't come on with first drive of the day, something gets stuck and it will not move correctly(it clunks and kinda stops the car. Idk) Turning my traction control off fixes it.
  • Tire pressure moniter warning
  • Gas Guage doesn't work properly(reads low)
  • Tail lights die semi-quickly.(been driving her about 3 yrs and have had to replace them twice)
  • Blinkers work but my stick will not stay in position for left blinker. Stick also doesn't automatically go off after turning.
  • Key occasionally gets stuck and will not completely turn off. Pressing my brakes and jiggling the gear or switching to reverse then back to park sometimes works. Sometimes turning car on and doing that works. Sometimes nothing worms and I have to sit and wait.
  • Transmission struggles to shift when going up steeper inclines.
  • Shakes when going 60+
Im sure I'm forgetting things but those are the main issues. I CANNOT afford a mechanic or a new car anytime soon. I can barely afford parts but I'm willing to DIY repairs that aren't incredibly difficult or require expensive special tools. My "skill" level/repairs I've done is the thermostat, coolant temp sensor, I've completely replaced the brakes, rotors, and calipers, and then general maintaince like fluids, fuses, battery, bulbs, etc.

Advice for any of the issues is welcome, but I'm mostly worried about the engine hot light right now. Since it's now summer, I'm afraid that it will mask an ACTUAL engine hot warning and I'll totally kill the car.
