Default Chevy C10 runs pretty rough

I parked my 65 Chevy C10 w/ 283, bored 3 over, 260 cam old corvette intake and edelbrock 600, dual flowmasters and when i parked it ran fine. Now two years later it wont idle at low rpm. I put new plugs in it, new fual filter, pulled off the carb and cleaned the hell out of it. The gas tank filter was fine. The gas tank was completely emptied last year. I then put new gas in it and even changed the oil. it runs smooht at higher rpms but when i let off the gas peddle at open choke it just turns off and is hard to start back up. getting pretty frustrated at this point. any answers to my problem?

Why do you keep the choke open??? once its warm enough , you lower the choke, cause otherwise your carb gets overfilled and drowns.

Also, did you flush the drains from the pump to the filter, from the filter to the carb?

It sounds like it's flooding out, you may want to rebuild the carb.
I think you know how the choke works, so I won't go there.

Agreed with Mudmaniac, With the carb sitting that long it sounds like your floats are stuck.
