Default Keep fuel injection or go carbed?

I had a 99 tahoe 4x4, 4l60E, and I couldn't get a title for it so I decided to make a toy out of it. I took a 48 chevy truck cab and put on the frame. I was very careful when I stripped the tahoe down by not cutting wires and kept everything sanitary. Now come the fun part of trying to make it run again since it ran and drove when I started this project. I AM NOT A CHEVY PERSON, so I don't know a whole lot about them.

So what would be the best and easiest route to go? Keep the black box and the fuel injection and transmission should work right or simplify things and go carburetor and find a different way to make the transmission work?

If I am told to keep the black box and fuel injection I would need advice on how to make that work also.
