Default Random Fuel cut off after 35-40 min drive. Not overheating.

Hey guys, if you have any ideas on what this could be im more than happy to listen. This truck has had a new aftermarket fuel pump installed. I filled up and then began to drive. It started off strong and mighty as ever, then after driving it down the highway it began to choke and then eventually stalled and wouldn't start again... it wasn't too hot when I touched the radiator cap. Just comfortably warm. 👌🏻 and then it would crank and crank but no spark. I parked it and scheduled a trailer from uhaul. Went to pick it up and It started right up.
I was able to drive it up onto the trailer with no issue, no stalling and it seemed fine. Is this a bad after market fuel pump? dirty carb? Faulty thermostat ? What are your thoughts? I don't have a bunch of money to be tossing into this thing, so I have to try and pinpoint it if I can.
