Unhappy Help: 1991 Chevy S10 randomly stalls at any speed

Hello.
I could use some help. I have no mechanical knowledge or skill. 1991 Chevy S10 2.8 V6 manual in great condition. But the truck just randomly turns off at any speed in operation in motion. It can be hard to start immediately following this stall. Sometimes requires a tow.
First instance was in Nov 2022. All was well for 9 months. It happened again in July 2023 but is now a daily occurrence in July, Aug, Sep.
Broke a C clip in the transmission but I feel that is unrelated. Changed spark plug wires and distributor. The alternator locked and changed that. Changed coolant sensor and maybe a coolant valve by mechanic? Changed fan clutch.
I have been to a Midas several times but they cannot identify the issue.
I did rear end a vehicle many years ago. It was hard enough to punch the radiator fan into the water pump. But the truck is beautiful and in great condition and runs great. But now it just randomly stalls. I do feel the tiniest little hiccup or misfire or belt slip or something very rarely but often the truck keeps running.
I guess it could be anything but seems odd to stall at speed in motion.

Update:

Midas finally changed the fuel regulator. I am hoping this solves my issue.

The truck continues to stall at speed. I have changed a tranny c clip, fan clutch, alternator, ignition coil, spark plug wires, fuel pump, fuel pump relay, fuel regulator, brake booster, coolant valve, coolant sensor, and fuel filter. The accelerator sometimes feels unresponsive and rarely there is a little hiccup or misfire. Any suggestions would be appreciated. Thanks.

Does it have an oil pressure sensor. ? I'm not really familiar with the V6 but, I'd say it does. My '90 G20 does and that was a problem I had. Also, be careful with replacing parts with the early 90s Chevys. They only like AC Delco. I had to go to an old junkyard to get a Map sensor. The new ones don't mesh well with the early computers. I ended up repinning my harness to a 95 K20 and buying a Moates emulator. I spent a lot of time learning TunerPro and made my own chips. Try the oil pressure sensor. If that doesn't work, you might want to try a new computer.

I sold the truck for $500 as it was not running. I changed the ECM or ECU and the ignition control module but it did not help. It might have been the oil pressure sensor because after 4 months of nursing this truck the oil pressure gauge did start to jump around or bounce a little bit at the very end. I also never tried the EGR valve.

The truck was 32 years old and all the dash components and plastic stuff and screw holes were cracking and breaking. All the plastic wiring looms were cracking in the engine compartment. All the plastic was oxidized and baked. It had 240,000 miles which is pretty low for 32 years.
