Hi desert chevy,
Welcome to the Chevy Forums.
I've always wondered about this, sometimes I do, sometimes I don't.
I've never been able to determine a cause/effect relationship as far as driving type, distance, weather, etc.

Humidity % in the air probably determines if condensation comes out the exhaust. Ambient air temp. is probably part of the equation also. High humidity + cool air temp = condensation. Warm moist exhaust hits the cooler exhaust system = condensation coming out the of the system. Short trips do not allow the system to heat up enough to burn the condensation out completly.

A small amount of the product of gasoline combustion is water along with all different types of carbons and oxides.
Gasoline has a little bit of water in it and it may not fully escape the exhaust.
Its perfectly normal to see moisture in your exhaust even in the dryest of climates.
