Default engine problems

I have a '78 Chevy K10 it's got a 350 small block with a 750 elderbrock carb in it and i know the previous owner told me that there was a small vacuum leak not sure where though but the big problem is i have to ease into the throttle ever so slowly and i want to do some mudding in this thing and i'd like to be able to drop the throttle so it would just be nice if i could resolve this problem not too sure where to start, if i drop the throttle it'll bog down and if i don't back all the way off it'll stall. previous owner told me about this and said it's a big carb so that was his reason but i'm not too sure so if you guys could help me out maybe you'll see me at the south florida pbir mud bogs!

um shooting in the dark here, maybe check to make sure you getting a good fuel air mixture and your pouring too much fuel in at one time

Look online for manual if after market and reverse it or maybe fix it
