Default tire size for best mpg 2005 1500 crew cab 5.3 4:10 gears

I just bought 05 Sierra Crew cab 4x4 with 5.3 L auto trans,and 4:10 gears. It came with custom 18" wheels that are 10" wide with 285 60 18 tires. Im sure these are costing me gas mileage. I now am getting just over 16 mpg pulling small trailer about 1000lbs.
I pull small trailers often and heavy ones a few times a year.What I am looking for is better mpg so i was going to get some stock 17" or 16" wheels if they will fit. It would seem to me that an inch or so taller than stock would be better
My Question is what size tires would give me the best mpg with mostly freeway miles, maybe (70% freeway/30% city)?
