Default 07 Tahoe help with diagnostic

So for the past few months I’ve been battling with my 07 Tahoe, it originally started with shifting issues from 1st to 2nd around 3000rpm let off and it would shift no problem then a week later it begins to jerk and goes in to lower power mode research that replaced my plugs and wires, started up ran good for a day then starting making a knocking noise thought it was Rod or lifters waiting for a friend to put his insight on it and it stopped the day he showed up. Been running it since and now it’s starting to run hard again and idle high and is sputtering. I believe it has to do with cold weather bing the only time I real have a problems

Scan tool that can read all 4 code families is a first step must. That's what every shop does when something comes in the door.
A full scan is a must to see what the system is seeing and if any codes have been stored in it. Without a full scan you're just guessing.

I forgot to put it on here it was originally a P0300 I changed plugs wires and ran still with a shift problem from first to second. I also changed both throttle controls at the intake and pedal and again it’s telling me that it’s the pedal. After putting these parts in it all ran fine for a few days. Now would it be the evaporation control sensor would be causing the problem. I was told no many times.

EVAP would not affect shifting of the trans. Pedal sensor can though. Check the harness to it for critter damage. My D in L just had that critter wiring issue on her Equinox.
Also use a good electronic cleaner/lubricant on all the harness plugs as any slight poor connection will trigger issues.

would the evap have anything to do with the idling and throttle hesitation, lack of power I’m pushing on I gas

That would be all throttle related.
Only way EVAP could affect it would be a big vacuum leak at the motor related to the EVAP system.
