Default 07 Tahoe occassional power loss

My 07 Tahoe behaves erratically sometimes.

This is what happens. Driving lets say at 60 mph. Sometimes I only need to press the accelerator an inch to start a good acceleration which takes me to 80 mph within seconds, but sometimes i need to kick the pedal down all the way to get the same result. It happens on and off all the time.

What could it be? The dealership disregards this as something they can not really test
