Red face 2003 Suburban Fuel Quantity Calibration

Hello, Im a newbie to the site. Let me start with a little background info.
I just replaced the stepper motors on all my gauges. Soldered in new bulbs as well since I was in there. However, when I indexed the gauge needles, I did not realize the gauge face overlay moved as much as it did and now my fuel gauge is off. The others are off as well but I can reset those using OBDII scanner for rpm, speed, oil press. etc..
Fuel Quantity however I cant. Short of running it out of gas and setting the gauge to zero, does anyone have any reccommendations for fixing this? Also does anyone know at what point the low fuel light is supposed to come on?

Mine come on around 1/8 tank. Can you fill the tank and calibrate the dial that way?

I think I read somewhere that the fuel light comes on when you have approximately 50 miles of estimated range or about ~3 gallons...

I thought of trying to fill it but I think if I fill it and set it to F it will be off on the low side. I changed the fuel pump recently and had the idea to measure the resistance of the old sending unit and compare that to the new one and set it from there. The range is 40 to 240 ohms resistance. Thanks for the suggestions and the welcome. I will let you know the result.
