Shouldn't turning off your Tahoe after you're backed into the ramp deflate the airbags?

It does not. the vehicle must be on to level it's self.

if you remove weight from the rear - engine off, the truck goes UP from the removal of weight.

if you start it, it will level it's self.

Just an idea now...
You could put a manual (spring/twist) Air Dump Valve between the Pump and Shocks.
Then let it down as much as you need, or all.
