Default Carriage works billet grill

I am considering buying a Carriage works billet grill. I have heard this is one of the best kinds of billet grills to buy as far as quality and looks goes. What is the difference between bolt over and the cut out kind? If I just installed the bolt over would it really make a difference in the look? Also what is the difference between brushed and polished? I have heard that polished looks better. Is there a better brand to go with than carriage works? Thanks for the help

Bolt-over doesn't require removal (cutting it out) while the other kind does. I have a polished bolt-over and like the look but thinking about the other kind because I think it would be recessed a little but not sure.
