I had the oil changed in my 2003 Chevy Tahoe about a week ago.I just got a low oil pressure warning. I checked under the truck and there was a substantial pool of oil. Could this be from the oil change not being done properly?

 

Yes, and if the seal from the old filter is still there, that's a big leaker.
