Is this valve serviceable?
The red arrow. Is it serviceable, or do you have to replace the whole part, hoses and all? If it leaks is there a way to stop it? My old 89 Chevy leaked there too.

Good question, with the old R12 systems you could just replace the valve stem. I don't know on the quick connect style, you may need to replace the line and charging port if the internal is not removable.

Guess I maybe didn't clarify. I'm needing to replace the one with the red cap. That is where my leak is, but the dealership is telling me that I have to buy the whole assembly with hoses and all (for about $125). I'm already out of freon, so it's leaking pretty good, and the cap isn't stopping anything either.
The cap is only meant to prevent crude from getting in and around the valve. If your R134a is already gone, then replace the valve, get the system evacuated to remove moisture and ensure that the leak is fixed, then refill.
But my question is can I change out the inside of that valve to fix the leak (like a tire stem, just screw it out and screw in a new one) or do I have to buy the whole assembly with hoses and all?
