Default 160* thermostat and aftermarketexternal transmission cooler

Im thinking of going to a larger aftermarket oil cooler for the transmission it’s been going to 210 on hills lately and people also say a 160* thermostat is the move any recommendations on best product? It’s almost winter don’t want it too run too cold but it’s near 100 degrees here everyday rite now it is a 04 6.0 gas.

Yes absolutely normal. That's barely above the temperature of the coolant which is being used to cool the ATF.
