Default 93 tbi 5.7 running rough

Ok, so I traded my motorcycle for this fullsize Blazer, and I've had nothing but problems since I brought it home. Most I have fixed or made better, but I cant seem to figure this one out. On a cold start it fires up just fine (90% of the time). Once you give it some gas it dies down and either dies or comes close. I've done everything I could think of to fix it (Tune up, dist cap and rotor, coil, ICU, TPS, IAC, fuel filter and computer.) Even though I'm throwing parts at it, they DID need replace so that's not a problem. My question is (besides a fuel pump) what could cause this? And have you had these problems in the past?

smell the exhaust for rotten egg smell (clogged cat converters)
or if they become glowing red when driving at night.

When my converters were clogged it would give the same symptoms. but then again it could be many other things. YOu could gut the cats (bang with hammer and then gas out all the pieces) to see if that is the issue and then replace them
