Not necessarily, Z71 means you have the Off Road package, which may or may not be a 4x4.

So I'm on the fence about wanting to convert my 05 suburban, do you know if the 2wd models already come with all the 4x4 wiring harnesses?

The parts alone will cost you more than the 16 yr. old truck is worth. Not only hard parts like transfer case and axle but several computers and modules will be needed.
Harness is different also.
