Most of the problems with some of the earlier build units were minor and resolved with software, my wife drives an early build Tahoe (with updated software) and we have had no problems with the vehicle.

I did test drive another Tahoe the day I bought mine that was just of the delivery truck (Still had plastic on the seats), but for some reason did not seem to drive that smooth. Maybe it was just a simple balancing of the wheels that was needed, but I opted for the earlier build also because I liked the body color mirrors, grill, and handles that came stock on Early LTZ's.
