Did you get an oil change because of the "CHANGE ENGINE OIL SOON" or "ENGINE OIL LOW ADD OIL" warning? It sounds like the latter which means the ECM determined a low oil level based on the engine oil level switch circuit.

May be the oil level sensor gone bad. Is Check Engine lite on?

No I went to Texaco express lube my oil percent was down to 10% still good so I went to get it changed. After the oil was changed it still said 10 % oil still good so the guy there showed me how to reset that feature back to 100% good then after that every time I start the car the words engine oil low fill oil show up so I push the mileage button and it goes away until I start the car again and it shows back up. I had them check the oil level and the guys said it was right where it suppose to be and there was no check engine light on

Default 5.3L Oil level Sensor location

So it didn't show up until after the oil change? if so they may have knocked something loose.
Attached is the location of the oil level sensor on the 5.3.

Or did it only show up after they reset the Oil Life back to 100%?

Before I left texaco lube I noticed the oil life needed to be reset and they showed me how to reset it. The very next day when I start the tahoe the message engine oil low add oil comes on but once I push another button it goes off. It did not show up til after the oil change and the message showed up after we reset the oil life button

Did they put in 6 quarts and it hasn't been leaking around the oil filter or drain plug? Am I missing something or in all this there's no mention of you checking the oil level yourself?

I'd check the connection to the oil level sensor, make sure the wires are not pinched or crushed. Its possible the "low" indicator could have been masked by the "change" oil so you didn't see the error until the most current one was cleared...
