well first you have to remove your driver side a/c vent by pulling up on those 2 tabs inside the vent .
then you will find a screw behind there that will release half of the surrounding plate that you need to get off ..
then you need to the same thing on your passenger air vents(the ones next to your wheel)once you do that there is another screw that you need to take out to release the other half of the surrounding plate
once youhave that piece out the you will see the screws around the speedo that need to be removed

I was looking at my Avalanche this morning (also an '07 LTZ) and got as far as pulling the two screws from the underside of the top of the arched trim around the cluster. And from there I quickly figured out that the A/C vents had to come out, but I don't see the tabs you mention needing to pull on. I see *one* thing on the driver's side at the bottom center of the vent, but nothing similar in the center vents. I pulled and pried (gently) here and there, but nothing seemed to come loose. Can you elaborate more on what I need to be looking for? Thanks!
