Default Where to go from here?

2015 Tahoe cooling fans continue running at times I’ve changed the coolant temp probe. We turn it off by popping the top of the fuse holder
what else could it be?

Welcome to the forum. I believe it's normal for them to run for a short period of time on hot days after you shut the engine off.

Relay contacts can stick closed, it happens occasionally.

Which contacts, and where would I find them. I don’t see anything related to this in the fuse box.

Cooling fan relay. It should be in the main fuse box. Those black little boxes, should say which is which inside the box cover.
