Default Temperature Sensor works for 2 weeks at a time

Hey. My temperature sensor will work for a couple of weeks and then will no longer read the engine temp. Result is fan running after motor is switched off.
I have replaced the sensor and the connection.
Still stops working after about 2 weeks.
The fix is to disconnect power and then reconnect. Fixes it every time but only for a while.
What could cause this? Thanks.

2014 Silverado 1500 5.3L
135k miles

I have never taken the temp. When it is not working the gauge reads nothing. No needle movement.
When it is working it reads 190-200
Thanks
