Default Transmission temps on a 2013 suburban 1500 4x4, while not towing

Hey guys. I just purchased the listed vehicle with 108k miles on it. In normal semi flat conditions around 80-90f air temps, it seems to be running in the 185-195F range, when I was going up a pretty steep grade for about 7-8 miles it got up to 215F before I got concerned and pulled over to let it cool back down a bit.

One thing I know is that the guy before me owned it from 86k-108k miles and never changed the fluid, doesn't know if it's ever been changed. Do you think this could cause the elevated temps or is there something else going on?

One thing... when it hit 215 and I pulled over, I checked the radiator fans (electronic) and they seemed to not be going into high speed but were just going normal. Should they have a high speed they should switch into? I am planning on installing a new fluid temp sensor in the engine block tomorrow just cause it's a $25 part and why not.

* I'm pretty sure it's the 4L80 or 4L80E transmission (17 bolts on the transmission pan), I'm just not sure which.
